Who doesn’t enjoy a nice freshly baked apple pie? So I want to preface this by letting you all know that I am not a baker and that I honestly do not enjoy baking things from scratch. That being said this recipe is very easily to make even if you are not a fan of baking like me! I did try to make this with gluten free flour and I had many a issues arise from using that. So I will keep working on making that recipe happen. This isn’t the lowest in calories which is unusual for me but it is home made and healthy for a cheat day! So why not indulge in this delicious treat! -The Accidental Chef

Ingredients for Dough:
• 2 cups of all-purpose flour
• 1 tsp of salt
• 1 cup of I cannot believe it’s not butter light
• 1/3 cup of cold water
Ingredients for filling:
• 6 Cameo or Granny Smith Apples or a mixture of both
• 2 tablespoons of lemon juice
• 1 cup of dark brown sugar
• 1 tsp of cinnamon
• ½ tsp of nutmeg
• 1 tablespoon of arrowroot powder

Directions:

Preheat the oven to 350 degrees.

To make the dough, combine the flour, salt, and butter in a food processor. Process until the mixture is crumbly. Add the cold water all at once and pulse until the mixture starts to become doughy. Press the mixture into two balls and wrap in plastic and place in the refrigerator until ready.

For the filling, peel and core the apples. Slice the apples into very thin slices. In a medium bowl, toss the apple slices with the lemon juice. Then add the arrowroot powder, cinnamon, nutmeg, and brown sugar and set aside.

On a well-floured surface, roll out one of the dough balls. Make sure it is big enough for your pie dish yet not cracking on the edges as that will make it fall apart.

Once rolled out gently place the dough into the pie dish making sure it doesn’t break apart. Trim the edges of the dough if there is a lot hanging over the pie dish edge.

Place the apple filling into the pie dish and roll out the other dough ball to place on top of the filling. I like to make three little cuts on top of the pie.

Place in the oven for 1 hour.
