Gluten Free Oven Fried Chicken Breasts

So, I have been craving fried chicken for some reason so this recipe came out of my craving and not wanting to give in to the unhealthy traditional fried chicken. As usual it’s my goal to recreate the taste of fried chicken without all the fat and this gluten free oven fried chicken recipe surely accomplished that. With the Slap Ya Mama spice it adds a little bit of a southern spiciness that I associate with fried chicken. Also, since I made this in the oven the chicken technically isn’t fried but it does taste just as good and it’s gluten free!  – The Accidental Chef

Preheat the oven to 400 degrees. Cover a baking sheet with tin foil and spray the foil lightly with the olive oil spray.

Add the mayo to a big ziplock bag and add the chicken as well to the bag.

Seal the bag tightly and shake the bag so the chicken is coated evenly with the mayo.

Get another big ziplock bag and add the Italian Style bread crumbs, the Panko, and the Slap Ya Mama spice in the bag. Carefully transfer the chicken from the mayo bag into the dry spice bag. Seal tightly and shake the bag until the chicken is evenly coated.

Once chicken is evenly coated, take the pieces out and shake gently to get rid of any excess crumbs or if the chicken isn’t fully coated, toss the chicken with the remaining crumbs in the bag.

Place the chicken on the foil, making sure that the chicken isn’t touching any other pieces or the edges of the sheet. Spray the chicken with the olive oil spray.

Put the tray into the oven for 15 mins. Then take the tray out and flip the chicken and place back into the oven for 15 more mins.

Add some BBQ sauce and enjoy!
