Key Lime Grilled Chicken Bowls

This delicious and easy key lime grilled chicken recipe is great for those hot summer days! The key lime combined with the soy sauce, cilantro, and green onions really gives this grilled chicken recipe so much zesty and fresh flavors. I like to pair this grilled chicken recipe with brown rice, but it would also make a delicious salad as well. – The Accidental Chef

Serves 4

Ingredients:

  • 3 skinless Chicken Breasts
  • 1 tbsp of agave
  • 1 tbsp of Tamari Gluten Free Soy Sauce
  • 1 tbsp of key lime juice
  • 3 corn on the cob
  • 1 tbsp of cilantro
  • 1 tbsp of green onions
  • 1 cup of brown rice
  • 1/4 tsp of cornstarch

Directions:

Marinate the chicken breasts with the agave, cilantro, green onions, key lime juice, and tamari. Let it marinate overnight.

Cook your brown rice with low sodium chicken broth.

When ready to cook, turn your grill on to medium high, and place the corn on the cob (not shucked) and the chicken on the grill.

Cook for about 7 mins on each side or until cooked through.

Take the leftover marinade, and place into a small saucepan over medium low heat. Add the cornstarch and stir. Remove once the sauce has thickened (about 5 mins).

Once fully cooked, remove the corn from the cob, add your rice to the bowl, add the corn, and then add your sliced chicken and pour the sauce on top. Serve with more cilantro and sliced green onions on top.
