Slow Cooked Balsamic Beef Stew

This slow cooked balsamic beef stew recipe is so easy to throw together. I love how simple this slow cooked beef stew recipe is yet how flavorful it is due to the balsamic vinegar and savory flavors of the onions. I like to pair this beef stew with creamy garlic polenta. – Kara

 

Serves 4

Ingredients:

  • 1/3 cup of low sodium beef broth
  • 1/3 cup of balsamic vinegar
  • 1 tbsp of Dijon mustard
  • garlic salt
  • black pepper
  • 2.5 lbs of boneless beef chuck roast
  • 4 large carrots, peeled and chopped
  • 1 medium onion, sliced

Directions:

Place the chopped carrot slices and the sliced onion into the slow cooker.

Add the beef.

Season with garlic salt and black pepper.

In a separate bowl, combine the 1/3 cup of low sodium beef broth with the 1/3 cup of balsamic vinegar and the 1 tbsp of Dijon mustard.

Then pour the mixture over the beef, making sure to brush the mustard onto the beef.

Cover the slow cooker and cook on low for 8 hours or on high for 4 hours.
