So my work gave me some eggnog the other day and thus I have began to create new ways to use eggnog in my healthy recipes that are low in carbs, sugar, and fat. This Pumpkin Eggnog Chocolate Bars recipe was thrown together last-minute but everyone at my office has loved the way it turned out! Even if you are not a big fan of eggnog, I am sure you will enjoy these moist and flavorful bars. You can easily make these vegan, just use dairy free eggnog.  – The Accidental Chef

Serves 28

Ingredients:

  • 15 ounce can of pumpkin
  • 2 cups of all-purpose flour
  • 1 1/2 cups of light brown sugar
  • 2 tsp’s of baking powder
  • 2 tsp’s of ground cinnamon
  • 1/2 tsp of salt
  • 1/4 tsp of ground cloves
  • 1/2 cup of low-fat eggnog
  • 1 cup of vegetable oil
  • 9 tbsp’s of semi sweet chocolate chips

Directions:

Preheat the oven to 350 degrees.

In a large bowl whisk the dry ingredients together: flour, sugar, baking powder, baking soda, cinnamon, salt, and cloves.

Then add the pumpkin and the oil into that bowl. Mix it together gently.

Then add the eggnog and stir to mix the ingredients until the mixture has thickened.

Then fold in the semi sweet chocolate chips – be careful not to over mix!

Then spray your baking dish and add the mixture.

If you want bigger bars, use a 9 by 13 baking dish, for smaller servings that are the same as this recipe calls for use a bigger baking dish like a 15 by 10 dish.

Depending on your baking dish your time will vary from 30- 50 minutes.

*Please note that the pictures are showing the bars that should-be been cut in half for each slice. I just was in a rush to plate this properly for everyone that I completely forgot to do that!
