This delicious crock pot corned beef recipe is so easy to make and is almost a full meal by itself. This extremely low carb delectable meal is perfect for spring home dinners or a lovely St. Patrick’s Day dinner. With the addition of the vegetable broth and parsley – the corned beef adds savory flavors to the rest of the ingredients in the crock pot, as the meat cooks. Serves 8

Ingredients:

  •  1 bag of baby carrots ( 16.5 oz)
  •  1 cup of vegetable broth
  •  2 cups of water
  •  2 tbsp. of parsley
  •  24 oz of corned beef
  • 2 medium parsnips, peeled and cut into rounds
  • 1 head cabbage, cut into 4 wedges
  • 2 bay leaves
  • 1 tsp whole peppercorns
  • 1/2 tsp of mustard seeds

Directions:

In a 5-6 qt crock pot, place brisket, carrots, parsnips, parsley, bay leaves, mustard seeds, peppercorns, 1 cup of water, and 2 cups of vegetable broth.

Cover and cook on high for 4 hours.
Add cabbage, cook on high for 1 hour 20 minutes more.
Remove the bay leaves, drain the liquid, and cut the fat off the corned beef before slicing it up.
