The Accidental Chef’s Go to Cauliflower Rice

 

This cauliflower rice recipe is my go to when it comes to taco sides and side dishes in general. I love pairing this with my Simple Salsa Verde Chicken and my Smokey Chicken + Roasted Corn Tacos recipes. This healthy easy cauliflower rice recipe is a great base for you to play around with how to season cauliflower. – Kara

 

Ingredients:

  • 1 medium head cauliflower
  • Grape seed Oil Spray
  • 1 tbsp extra virgin olive oil
  • 6 garlic cloves, minced — but separate 3 cloves, mince, and place them aside separate from the other minced garlic
  • 4-5 scallions, diced
  • 1/2 tsp garlic powder
  • black pepper
  • 4 oz of lime juice
  • 1/3 cup fresh chopped cilantro
  • 1/2 tsp Cayenne pepper * if you can handle the heat

Directions:

Cut the cleaned and dry head of cauliflower in half.

Cut of the core and chop the first half into bite sized florets.

Place into a bowl once finished. Repeat this with the other half but place these florets into the food processor.

Place the 3 minced garlic cloves into the food processor, 1/4 teaspoon of black pepper, and pulse until the cauliflower looks like little pieces of grains. Then place this “rice” into an empty bowl and set aside.

*The key to not creating mush is to not place too many cauliflower florets in when you pulse. You can season all the florets and then pulse small amounts at a time. It really depends on the size of your food processor. Smaller processor = small amounts of florets, bigger = halves.

Place the other half of the chopped florets into the food processor, add 1/4 teaspoon of black pepper, 1/2 tsp of garlic powder, and pulse again until it resembles grains.

Place these into the other bowl with cauliflower “rice” and mix with a fork, as forks help to fluff up the “rice”.

Heat a large sauté pan over medium heat.

Once warm, spray the pan with grape seed oil and add the scallions and garlic and sauté about 3 minutes.

Add the cauliflower “rice” into the pan now and stir in the lime juice, oil olive and cilantro.

Let that cook with occasional stirring for about 5-6 minutes, then remove from heat and serve!
