Prosciutto Wrapped Oven Baked Cod

This delightfully light and zesty oven baked cod recipe is very easy to make and is packed full of flavors. The prosciutto infuses the cod with a lot of flavor so there is no need to season the cod before wrapping it up in prosciutto. Then adding the lemon parsley sauce on top balances out the salty savory flavors from the prosciutto. Serves 4

Ingredients:

  • 1 lb of cod
  • 1/2 tsp of black pepper
  • 4 thin slices of prosciutto
  • 1 tbsp of olive oil
  • 4 tbsp of vegan butter
  • 2 tbsp of capers, drained
  • 2 tbsp of parsley, minced
  • 2 tsp of lemon juice
  • 3 garlic cloves, minced

Directions:

Preheat the oven to 450 degrees.

Cut the cod into 4 slices.

Pat dry the cod and then wrap the cod with one slice of prosciutto.

In a large pan over medium high heat, add the olive oil and then the wrapped cod.

Sear each side for 2 mins then transfer the wrapped cod into a baking pan.

Place the baking pan into the oven for 8 to 10 mins or until the cod is flaky.

In a small pan, heat up the butter, capers, parsley, lemon juice and garlic until the butter has melted.

Then cover the fish in the butter sauce and serve.
