Prosciutto Roasted Turkey Breasts

I love how easy this prosciutto wrapped roasted turkey breasts recipe is. I wanted to create a holiday recipe that wasn’t super labor intensive and that could be thrown together last minute if needed. I love that this recipe makes great leftovers if you are just cooking for two. Also please note, that each serving is very large and can easily be split into two servings. I like to pair this recipe with brown rice as it’s an easy side, but it also soaks up the flavor of this recipe so well. You also don’t have to use cosmic crisp apples (these are just my favorite), so feel free to use your favorites. – Kara

 

Serves 4

Ingredients:

  • 4 turkey breasts
  • 1 large sweet potato, peeled and cubed
  • 3 cosmic crisp apples, sliced
  • 1/2 yellow onion, sliced
  • 1/2 tsp of nutmeg
  • 1/2 tsp of garlic salt
  • 5 sprigs of thyme
  • 1 carton of poultry herb blend (Sage, thyme, and rosemary), finely minced
  • 4 slices of prosciutto
  • 8 slices of pancetta
  • 1/2 cup of apple butter
  • 2 cups of apple juice

Directions:

Preheat the oven to 350 degrees.

In a large roasting pan, place the apples, sliced onions, and cubed peeled sweet potatoes.

Sprinkle 1/2 tsp of nutmeg and 1/2 tsp of garlic salt over them.

Then place the thyme sprigs on top.

Then dry the turkey breasts, season with garlic salt on both sides, rub a small amount of the finely minced poultry blend herbs over the turkey breasts on both sides.

Wrap the top half of the turkey breast with prosciutto and the bottom half with two slices of pancetta.

Repeat this step with all of the breasts.

Place the turkey breasts on top of the sweet potato/thyme sprigs with the prosciutto side facing up.

Sprinkle the remaining herbs over the breasts.

Then brush each turkey breast with apple butter (top side only).

Then pour the apple juice into the baking pan.

Place the pan into the oven and cook for about 2 hours. (Check on the turkey breasts every 30 mins, and if the prosciutto looks like it is drying out, then glaze the juice in the pan over the breasts each time you check).

Once done cooking, place a mixture of the apples, onions, and sweet potatoes over the rice and then place the turkey on top.
