Grilled Cedar Wrapped Salmon

This smoky grilled cedar wrapped salmon recipe is so easy to make for a fast and delicious summer lunch or dinner. By using the cedar wraps you end up infusing a lot of flavor into the fish. I love to pair this with Prosciutto Wrapped Asparagus and brown rice, but this would also be great over a salad as well. Make sure you soak the cedar wraps for four hours or they will catch on fire immediately when placed on the grill. You can find the cedar wraps at Amazon, Etsy, Sur la Table stores. – Kara

Serves 4

Ingredients:

  • a bundle of asparagus spears
  • Prosciutto (1 package)
  • 1 lb of sockeye salmon
  • 4 cedar wraps
  • Vegan Butter Stick (4 tbsp)
  • 1 tsp of Slap Ya Mama Seasoning
  • 1 tsp of garlic salt
  • 2 tsp of Smoked Paprika
  • 1 tbsp of Olive Oil
  • lemon juice
  • black pepper

Directions:

Soak your cedar wraps in water 4 hours prior.

Wrap a bundle of asparagus in one piece of prosciutto.
Season with Garlic salt and black pepper and drizzle with olive oil.
Repeat until you have no more prosciutto and asparagus.
Slice your salmon into 4 pieces.
Season with Garlic salt, slap ya mama seasoning, and smoked paprika.
Squeeze a fresh lemon over the salmon pieces.
Cut the butter into 1/4 thick slices and place each slice on top of the salmon.
Place the salmon on top of the cedar wrap and fold it up and hold it in place by tying string around it.
Grill both the salmon and asparagus over medium high heat for about 30 mins.
Take them off the grill and when ready to serve, cut the string and remove the salmon from the cedar wraps.

Serve over salad or brown rice and enjoy.
