Gluten Free Pasta Pomodoro

This is a great simple but flavorful gluten free pasta recipe! Pomodoro is a tomato-based sauce that is typically made from tomatoes, garlic, olive oil, and fresh basil. However, I tend to always use garlic in all my recipes, so I opted out for this recipe but if you would prefer some garlic, I would only recommend only one large clove. Since this recipe is sans garlic, the garden-fresh flavors of the tomatoes, carrot, onion, and celery, really shine in this pasta Pomodoro sauce. Serves 4

Ingredients:

  • 3 lbs of plum tomatoes
  • 1 yellow onion, peeled and cut in half
  • 1 carrot, peeled
  • 1 celery stalk, cleaned
  • 8 large Basil leaves, chopped
  • 1 tbsp. of olive oil
  • pinch of salt
  • 1 box of Gluten Free Banza Chickpea Pasta Shells

I highly recommend Banza Chickpea Gluten Free Pasta, not only does it taste like actual pasta, it’s extremely low in net carbs, and low in fat!

 

Directions:

Place the tomatoes, onion halves, carrot, and celery in a large pan over high heat with the lid on for 10 minutes.

Remove the lid, add oil, and flip the tomatoes over, lower the heat to medium, and cook for 10 minutes.

Lower the heat again to a simmer. Add the chopped basil, and a pinch of salt into the pot

and cook for an additional 10-15 minutes, or until the tomatoes are soft as shown below:

Remove the carrot, celery, and onion from the pan.

Using a blender, immersion blender, or food processor, blend together the rest of what’s left in your pot. Blend until almost smooth as shown below:

Set aside.

In a different large pot, bring at least 8 cups of salted water to a boil. Add the Banza pasta and stir immediately.

Cook for about 11 minutes, stirring occasionally — there will be foam as seen below.

Strain, and rinse with cold water.

Then in a large bowl, combine the pasta shells with the sauce, top with your favorite cheese and serve!
