Gluten Free Air Fried Cod Fish and Chips

I have been working on this delicious cod gluten free fish and chips recipe for years now. Trying for so long to replicate that flour fried crunch without using Panko. You are welcome to switch out the chips I use for a different brand, but I felt like using this brand for these air fried gluten free cod fish and chips worked the best. It gives it a nice crunchy flavor and saltiness is really balanced out by the cod. I pair these air fried gluten free cod fish and chips with my air fried potato chips to cut down on the sodium intake. – Kara

 

Serves 4

Ingredients:

For the Fish:

  • 1 lb of cod, cut into bite size pieces
  • 1 tsp of garlic salt
  • 1 tsp of Slap Ya Mama seasoning
  • 1 Egg white
  • 1 4oz bag of Lay’s Potato Chips, smashed

For the chips:

  • 24 Fingerling Potatoes, thinly sliced
  • 1 tsp of garlic salt
  • black Pepper
  • 1 tbsp of Avocado Oil

Directions:

For the chips:

Slice the potatoes into thin slices.

In a large bowl of cold water, soak potato slices for 20 minutes.

Drain potatoes, pat dry with paper towels.

Wipe bowl dry; then add the potatoes, oil, salt, and pepper. Toss gently to evenly coat the slices.

Lightly coat the air fryer basket with cooking spray. Place half of the potato slices in the basket and cook for 10 mins at 375 degrees.

Take them out, flip them, and cook for an additional 10 mins, or until the edges are crispy.

For the fish:

Slice the fish into smaller pieces. Pat them dry, then season them with garlic salt and slap ya mama seasoning.

In a shallow bowl, beat the egg white until foamy.

In another bowl add the crushed chips.

Dip the fish into the egg white mixture, and then into the smashed chip to coat.

Heat your air fryer to 400 degrees and cook for 13 mins.
