Triple Herb Apple + Pear Gluten Free Stuffing

This easy and delicious apple + pear gluten free stuffing recipe is perfect for your winter holiday season! This lower carb recipe will make your home smell incredible as it bakes and to me smells like the holiday spirit. I prefer to use Pink Lady or Cosmic Crisp Apples as they are juicy with, in my opinion, the perfect balance of sweet and tart, which helps to balance out the savory flavors from the herb mixture. Serves 8

Ingredients:

  • 1 cup of finely chopped celery
  •  2 tbsp of chopped fresh sage
  •  1 tbsp of chopped fresh thyme
  •  1 tbsp of chopped fresh rosemary
  •  6 garlic cloves, minced
  •  3 cups of unsalted chicken stock
  •  6 tbsp of Vegan butter spread
  • 2 cups of finely chopped sweet onions
  •  4 large eggs beaten
  •  1 loaf of bread
  •  1 medium pink lady apple or cosmic crisp apple, chopped
  •  1 large Anjou pear, chopped

 

Directions:

Preheat the oven to 350 degrees F.

Arrange bread cubes on a baking sheet; bake at 350 degrees for 10 minutes.

Then take them out and flip them and put them back into the oven for 10 more mins or until toasted.

Divide the bread cubes between two large bowls.

In a large pan over medium heat, sauté the onion, celery, and 2 tbsp. of the vegan butter for 5 minutes or until the onions are translucent.

Add the sage, thyme, rosemary, and garlic; cook for 5 more minutes with 2 tbsp of butter.

Then remove the mixture from heat and divide it evenly between the two large bowls of bread cubes.

Stir carefully to evenly coat the bread cubes.

Melt 1 tbsp. of butter per bowl and then carefully add it into the bread bowl.

Whip two eggs together and then add them to one bowl. Then add 1 cup of low sodium chicken broth and gently stir it all together. Then repeat that process for the second bowl.

Place a layer of chopped apples and pears on the bottom of your baking pan. Then add the bread cubes and then a layer of apples and pears.

Repeat until you are out of bread cubes.

Then add the 1 cup of low sodium broth over the top layer of bread cubes and fruit.

Place into the oven for 40 minutes at 350 degrees F. Take out after and enjoy!
