Healthy Pumpkin Spiced Latte

My favorite way to drink in the feeling of fall is to drink a homemade healthy Pumpkin Spiced Latte. So, anyone who knows me, knows that I rarely ever drink caffeine and practically never drink coffee (Yes, I live in Seattle and yes, I don’t enjoy coffee — it happens). But I always make an exception for this low-fat dairy free seasonal drink because it tastes so creamy, light, and full of my favorite fall flavors. Serves 4

Ingredients:

  • 6 cups of Macadamia Nut Milk
  • 8 tbsp pumpkin butter (Trader Joe’s)
  • 1/2 cup of canned pumpkin
  • 4 tsp vanilla extract
  • 4 tsp pumpkin pie spice
  • a pinch of cinnamon
  • 8 tsp light brown sugar
  • 2 cups of any kind of brewed coffee
  • Optional: fat-free whipped topping

Directions:
In a small pot combine milk, pumpkin butter, canned pumpkin, and light brown sugar and cook on medium heat, stirring, until boiling.

Immediately remove the pan from heat, and add in the vanilla, pumpkin pie spice, cinnamon, nutmeg, and the brewed coffee. Use a blender to mix or use a whisk.

Voila you have now made a delicious but healthy drink! Now just add the whip cream and sprinkle some pumpkin pie spice on top!
