I am so excited to share this Moroccan Lamb Chops recipe with you all as I have been creating and perfecting this recipe all summer! I was inspired by the Mediterranean flavors of rosemary combined with lamb and wanted to add some more savory flavors with the pancetta and a taste of Morocco with the spice Za’atar.

This healthy lamb recipe is a great transition dish into the cooler months — perfect for August / September. This delicious healthy Mediterranean Moroccan inspired recipe pairs amazingly with Right Rice: Rice made from Vegetables or couscous! – Kara, The Accidental Chef

Serves 10

Ingredients:

  •  1 tbsp. of Za’atar
  •   1/2 tsp of Garlic Powder
  •  1 tsp of Cumin
  •  1/3 cup of Reduced Sodium Worcestershire Sauce
  •  10.5 oz of Cherry Tomatoes
  •  4 oz of diced Pancetta
  • 1/2 cup of diced white onion
  • 1 large garlic clove, minced
  • 1 tbsp of Olive oil
  •  1 small sprig of rosemary

Directions:

Start by marinating the meat with the 1 tbsp. of Za’atar, 1/2 tsp of garlic powder, 1 tsp of cumin, and the 1/3 cup of Worcestershire Sauce. Place in the fridge for at least 2 hours, preferably overnight.

In a large pan, add the 1 tbsp. of Olive oil and sauté the minced garlic with the 1/2 cup of diced onion until the onions are almost all translucent.

Then add the diced pancetta and sauté for an additional 3 mins.

Then add the lamb chops with the marinating sauce into the pan.

Top with the cherry tomatoes and the rosemary.

Partially cover and cook for 15 mins.

Then flip the lamb chops and cook for 5 mins for rare, 10 mins for medium rare, 15 for well done.

Remove from heat, let it rest for 5 mins and serve!

I like to pair this dish with Right Rice Spanish Rice Made from Vegetables and serve it for a delicious hearty dinner!
