I Can’t Believe It’s Mashed Cauliflower!

Mashed Cauliflower

This low carb and low-fat healthy side mashed cauliflower dish recipe is easy to make and a great alternative to mashed potatoes.  This gluten-free recipe is still packing the same great taste of mashed potatoes without creating any food guilt. This recipe took a while for me to perfect because I didn’t want it to taste like cauliflower. Enjoy the taste of creamy mashed “potatoes” without the heaviness.  – Kara

Serves 6

Ingredients:

  • 1 large head cauliflower, chopped into bite size florets
  • 2 tsp of garlic powder
  • 1/4 cup 1% buttermilk or Macadamia Nut Milk
  • 1 1/2 tsp black pepper
  • 1 1/2 tsp of dried parsley
  • 1 medium potato, peeled
  • 1 tbsp light butter Or Earth Balance Vegan butter

Directions:

In a microwave cook the potato peeled until easily pierced by a fork or bake in an oven for 30-40 minutes at 400 degrees.

In a medium pot, add water and cauliflower and bring to a boil, then reduce the heat and cover for about 15 minutes or until the cauliflower is fork tender.

Add the cauliflower to a food processor with 1/4 cup of the buttermilk, 1 tsp of the parsley, 1 tsp of black pepper, 1 tsp of the garlic powder.

Then blend it together until the mixture looks creamy as shown in the picture below.

In a large bowl, add the potato, the cauliflower blend, the butter, 1/4 cup of buttermilk, 1/2 tsp of parsley, 1/2 tsp of black pepper, 1 tsp of garlic powder. Mash the potato with the mixture. Then using a fork mix the mixture together until everything has blended.
