Margherita Cauliflower Crust Pizza

This healthy gluten free cauliflower crust pizza version of the classic Margherita pizza is perfect for those are gluten free and low carb. Low in fat, carbs, and calories this classic Italian seasoned gluten free cauliflower crust pizza is sure to be a hit for dinner with friends. Serves 8

Ingredients:

  • 2 eggs
  • 1 bag of Cauliflower rice ( 425.0 g)
  • 1/4 cup of parmesan cheese finely shredded
  • 1/2 tsp of black pepper
  • 1 tbsp. of dried parsley
  • 2 tbsp. of dried basil
  • 1 tbsp. of dried oregano
  • 1 tbsp. of gluten free Italian style bread crumbs
  • 3 tbsp. of No salt added tomato sauce
  • 1/4 cup of fresh basil, slices
  • 2 tsp of garlic powder
  • 9 oz of low fat Mozzarella cheese

Directions:

Preheat the oven to 425 degrees.

In a microwaveable cup or bowl place 2 cups of cauliflower rice and microwave 5 minutes. Take out of the oven and dump the cauliflower rice into the cheese cloth or a drainer. With gloves or mitts, squeeze out as much water as you possible can. Then set aside.

In a large mixing bowl, combine the eggs with the black pepper, parmesan cheese, dried basil, dried parsley, dried oregano, garlic powder together.

Then add the cauliflower rice and breadcrumbs. Mix together.

Place parchment paper on a baking sheet or pizza pan. Place the ball onto the parchment paper and slowly flatten it out in to a bigger circle. Make sure that it is evenly spread out and that the crust isn’t breaking apart.

Place pan/sheet into the oven for 5-8 mins or until the edges start to crisp. Take out of  the oven and flip the crust to the other side.

Top the pizza with the sauce,

half of the basil,

and place mozzarella slices on the pizza.

Top a pinch of the basil on top and place back into the oven for 10 mins or until the cheese has melted.

Remove and top with remaining basil.

Slice into 8 pieces and serve. Enjoy!
